I'm at a loss on how to assign pilots, or cabin crew, or anything like that. I also don't know how to train pilots certified for other airplanes in my aircraft, or how to fire them...

You can hire pilots in v2.13, but they don't do anything yet.
You don't need pilots to operate yet. That will come in the next release.

It's not letting me directly reply, but I keep getting a message saying I don't have enough pilots and or aircraft in the pool when I have idle airplanes

I'm assuming you're playing a scenario then?

It's a known bug in the Malaysia scenario. This is fixed for 2.14.

That comes up when you try to launch a route thats not assigned to a plane
