The 67% business / 33% tourist pax is the share of each passenger type onboard of your flights.
This can mean a couple of things (or probably a combination of all of them).
One of the causes can indeed be a higher business demand than tourists on the route. (this is likely on LCY)
Other causes include frequency, departure and arrival times, what days you fly on, prices and IFS/IFE settings.
Business pax prefer a high frequency (which you have), a return flight as soon as possible (short haul preferably the same day) and decent IFS/IFE.
A 100% filling degree with 10 frequencies seems a lot indeed, I'll check the exact numbers for the demand tomorrow.
LCY and EWR both aren't the largest airports around. On the other hand the UK and USA have highest relations in both ways.
